PIGNOLO DOC

Vinification: Long maceration at a controlled temperature. In this phase many replacements and delestages are carried out to facilitate the extraction of coloring substances and tannins. Fermentation in stainless steel barrels. When it is drawn off, the wine is left to mature in 20hl oak barrels, for a period of about 12-24 months depending on the year, and it is refined in stainless steel until it is bottled.
Color: Wine with an intense ruby ​​red color, garnet if aged
Olfactory and gustatory notes: On the nose it is very complex and intense, there are a thousand hints, but the ripe red fruit and the hazelnut stand out. In the mouth it is full and dry, with a fine tannic finish. Of great personality and character.
Pairings: if aged it is perfect with grilled meats, game, and spicy salami.

REFOSCO DAL PEDUNCOLO ROSSO

SCHIOPPETTINO

Vinification: The total grape harvest takes place in boxes. They remain for about a month in a special dehumidified and ventilated room. Subsequently the grapes are de-stemmed and the must remains in contact with the skins for a long period at controlled temperature. Color: Ruby red wine with violet reflections
Olfactory and gustatory notes: Autochthonous vine of Prepotto. The nose is intense, very spicy, reminiscent of cinnamon, wild blackberry, a feature that is also evident in the mouth. Thanks to the withering it is round, full-bodied, the finish is soft.
Serving temperature: Serve at 16-18 ° C.
Pairings: Schioppettino passito is a very versatile wine, it can be paired with aged cheeses, first and second courses based on meat.

SCHIOPPETTINO DI PREPOTTO

Olfactory and gustatory notes: The nose is very complex and characteristic with hints of green pepper and small red fruits. In the mouth it is ample and persistent.
Pairings: if aged it is perfect with grilled meats, game or aged cheeses.
Serving temperature: Serve preferably at 17-18 ° C.
